And while I've come to make great iced lattes (okay okay, at least says me and my husband), the hot version -- cafe latte, is another story. I like the taste of the ones I make, but how I wish I can also make latte art to get an even more specialty coffee shop feel from the cups I prepare.

A few days ago, I was fortunate to attend the <b><i>Facebook Live Session</i></b> of <b>Breville PH Coffee Festival</b>. Powered by <b>Breville Philippines</b>, <b><i>David Dource</i></b> who's the <u>Academic Director of the Philippine Chapter of Barista Guild Asia</u> and an Award-Winning Barista and a Master Latte Artist, shared his tips and techniques on Latte Art through a Q&A and a live demo.<a name='more'></a>

And while I've learned a great deal from reading up on the internet and watching countless Youtube videos on the matter of latte art, nothing is better than getting to ask and receiving an answer directly from an expert. David patiently and thoroughly answered all our questions, from how to choose the right milk, how to properly steam milk, and how much milk to use, among others.

But the most exciting part is watching his live demonstration where he walked us through the ideal coffee station setup, to pulling an espresso shot and steaming the milk, and lastly, creating the latte art. Speaking of latte art, the Master Latte Artist effortlessly made three cups with a Heart, a Rosetta, and a Swan latte art pattern, all of which are perfectly framed and symmetrical. It was truly amazing!

It's a different story though when I eat with another person. We also chatted over our green tea lattes, which by the way, are not discounted. Every merchant listed on <b>Eatigo</b> has a <i>special condition</i> when booking -- like discount would only apply to food and not on beverages, no discount on set menus, would only hold the reservation for 15 minutes, and so on. So it really pays to read everything before booking to prevent any avoidable misunderstandings.<br />

However, it took the ex-boyfriend-now-husband and I a good look at <b>Mazendo's</b> menu before we realized they're serving Taiwanese food and not Japanese. Not sure if it's just us, but when we first saw their signage, we really thought they were a Japanese restaurant. <b>Mazendo</b> just looks and sounds Japanese to us. Or is it just us? (・∧‐)ゞ<br />

Anyhow, we're always up for trying out new restaurants. Or restaurants new to us, at least. So despite our initial disappointment that they don't offer our favorite stinky tofu, we ordered a few items to try.<a name='more'></a><br />

I was keen on ordering boiled dumplings either in sesame or spicy sauce, but since I knew the then-boyfriend wouldn't help me finish a serving (he's not a big fan of peanut-based sauces nor food too spicy), we opted to get steamed pork and shrimp dumplings instead. These were not the best dumplings I've ever had, but they're more than satisfactory. The pork, shrimp and vegetable filling was juicy, nicely seasoned and of good amount -- not skimped but also not too full. The dumpling wrappers were of nice thick/thinness too. But the next time we're coming back to <b>Mazendo</b>, I'll definitely get the boiled dumplings in sesame and spicy sauce! They might be more interesting.<br />

I know it may seem redundant to order another kind of dumpling with pork, but I just had to get it since I love the crispy starch part of this style of pan-fried dumplings! I wish there were more of the crispy starch though, but this dumpling hits the spot. I really prefer my pan-fried dumplings (they were still slightly steamed though) than boiled or steamed ones, as I get to enjoy a softer top and a crispy bottom (or vice versa depending on how you eat it).<br />

For my main dish, I opted for their hand-pulled noodles and roast beef in a hearty soy sauce and tomato-based soup. I can't remember now whether the hand-pulled noodles had a nice bouncy texture, but I don't remember complaining, so that's a good start. The beef pieces on the other hand, were soft and tender. Even without teeth, I think I'd be able to savor it! And the soup, I might have missed having tomato-infused beef broth in Taiwan, but I can get on board with this! It's rich and savory with a hint of sweetness from the tomato. Not at all weird-tasting.<br />

The ex-boyfie on the other hand, ordered for this rice set. We've both loved pork jowl (cured and smoked pork cheeks). And because we can't always have it, we love it even more! So we were just happy when we saw this on the menu.<br />
<br />
The name of the dish is a bit misleading though. From what I know, the name <i>Matsusaka Pork</i> is commonly used by restaurants in Taiwan <a href="http://www.taipeitimes.com/News/taiwan/archives/2010/09/19/2003483234" rel="nofollow" target="_blank">to describe a cut of pork that has a perfect fat-to-meat ratio</a>, similar to the Japanese Matsusaka Beef. But it doesn't mean the pork they use is from Matsusaka in Mie, Japan. I'm not 100% sure if this is also the case with this dish at <b>Mazendo</b>, but I feel like it is.<br />
<br />
Anyhow, whether or not they used local pork or imported, we're fans of pork jowl, so we loved this dish. Sadly, we found the portion of the pork jowl a bit small. As much as I wanted to have my fill, I was even returning the slices the ex-boyfie was giving me, as I know the serving isn't enough even for him alone. And this rarely happens! The soup that comes with the rice set is also nice though.<br />

<b><u>THE VERDICT</b></u><br />

What I love about Taiwanese food is how tasty and satisfying they are without being too expensive. This might not be the case here in the Philippines though, as we always needed to splurge a bit to enjoy Taiwanese fare. However, it's still nice that we can have our fill even away from the cuisine's country of origin.<br />
<br />
For Mazendo, our visit didn't leave us immediately wanting for more (compared to how we always are when we were in Taiwan). But the food is generally good and we found interesting menu items we'd be ordering again or will be ordering next time (Mala Noodle Soup, Spicy Dumplings, Dumplings in Sesame Sauce v(*’-^*)). Portion of their food is decent, but if you're a big eater, it may be a bit <i>bitin</i>. Service was efficient, prompt and friendly though. And the place albeit not too big is nice, with warm lighting, modern interiors and even an open kitchen to entertain (or for checking the place's cleanliness).<br />

I don't eat it quite often as my usual foodmates (what I call people I eat with) don't have a natural affinity for Middle Eastern cuisines. However, when I do have it, I'd have to share it with loads of people to the point that I feel like I didn't even have enough!<a name='more'></a><br />

Cards are dealt one by one, face-down, until each player has five of them. When each player has five cards, the rest of them are placed face-down in the center of the table. Then, one by one, the dealer will up-turn the first card at the top of the pile, placing it face-up besides the face-down pile. This single face-up card is the ‘starter pile’ and each player, one by one, places a card face-up on the<br />

Each card placed down on the starter pile must match the card facing up at the top of the pile, unless it is an eight; an eight can be placed down regardless. The first player who does not have any cards left will win the game.<br />

<h2>#2: Slapjack</h2><br />
Each player sits in a circle around the table and cards are dealt clockwise, with the cards kept face-down. Then, around the circle, each player will draw a card from the top of the deck and places it in the center of the circle. Each player does this until a ‘Jack’ card surfaces. When this happens, you need to be the first player to ‘slap’ it and cover it with your hand.<br />

If a player slaps a card which is not a Jack, the card at the top of his or her pile is surrendered to a player who placed the card which was slapped. If multiple people slap the Jack, the person whose hand is most covering the card will win and add all of the cards to his pile.<br />

If you lose all of your cards, you are out; the aim of this game is to be the person who wins all the cards or the most cards.<br />

<h2>#3: Concentration</h2><br />
Concentration really tests your memory and it is a classic family-friendly card game. The game is very simple – place all of the cards on the table face-down in rows of seven, flipping them over two at a time in turns. If the cards are the same, you keep them. If not, you turn them back over and the game carries over to the next player.<br />

<h2>What is Type 2 Diabetes?</h2><br />
I'm no medical practitioner nor a diabetic. However, I know a few things about diabetes which I want to share with you (if you didn't know yet), being a descendant of a few diabetics in our lineage.<br />

While <a href="https://www.webmd.com/diabetes/ss/slideshow-type-1-diabetes-overview" rel="nofollow" target="_blank">Type 1 Diabetes</a> is a totally different monster considered as an autoimmune disease, Type 2 Diabetes on the other hand, is more of a <u>lifestyle disease</u>. In Type 2 Diabetes, the body isn't able to use insulin the right way. Insulin is a hormone made by the pancreas that helps keep the blood sugar level from getting too high (hyperglycemia) or too low (hypoglycemia) as it is responsible for allowing the body to use sugar (glucose) from carbohydrates for energy or to store glucose for future use. In the case of someone with Type 2 Diabetes, the body becomes <u>insulin resistant</u> where it can't respond properly to the insulin it makes. And over time, this sends the blood sugar levels up.<br />
<br />
If one has family members with diabetes, of course there's a higher risk to be susceptible to the disease. However, eating too many processed foods such as white breads, pastas, rice and soda, as well as food high in saturated fats, and lack of physical exercise, can cause insulin resistance. And when the blood sugar levels get abnormally high, one becomes diabetic. Over time, as the diabetes gets worse, the pancreas makes less and less insulin, then causing <u>insulin deficiency</u>.<br />
<br />
Not scaring you all, but many might probably know that diabetes remains the leading cause of blindness and kidney failure, as well as a critical risk factor for heart disease, stroke and foot or leg amputations.<br />
<br />
<h2>How to Prevent Diabetes</h2><br />
If you're a diabetic, you've probably already had the talk with your doctor. But for those who are like me who aren't diagnosed "yet" or possible candidates, here are some things we can do to improve our chances of not getting the disease.<br />
<br />
<u><b>1. Eat Sensibly</b></u><br />
<br />
I love food, and you probably do too! It might be hard to resist that deep-fried meat, that chocolate-dipped pastry, or that fizzy sugary drink, but we probably know when enough is enough, and when our body needs a dose of the good stuff. The key is moderation -- both in what we put in our mouths, and the portion size. It's okay to indulge a little from time to time. However, most of the time, we have to feed our bodies with whole foods high in nutrients and in a reasonable portion.<br />
<br />
<u><b>2. Exercise Regularly</b></u><br />
<br />
Diet makes up a large percentage of one's health and wellness. However, it's also essential to get regular exercise as lack of physical activity can cause muscle cells to lose their sensitivity to insulin, thus becoming insulin resistant and more susceptible to diabetes. So even if this may seem like a list for weight-loss, a healthy balanced diet and regular exercise really go hand in hand.<br />
<br />
<u><b>3. Sleep Well</b></u><br />
<br />
It may be hard to get a good night sleep for a millennial, as 24 hours a day for work and play may not even seem enough. However, studies have linked sleep deprivation to insulin resistance. As per the study presented at <a href="https://www.sciencedaily.com/releases/2015/11/151104134039.htm" rel="nofollow" target="_blank">The Obesity Society</a> on canine subjects, one night of no sleep reduced insulin sensitivity by 33%, while six months in a high-fat diet alone reduced insulin sensitivity by 21%. While a prolonged high-fat diet is no good, getting no sleep is even worse!<br />
<br />
<u><b>4. Get Checked</b></u><br />
<br />
You cannot prevent or even treat what you don't know, so getting regular laboratory tests such as Complete Blood Count (CBC), Fasting Blood Sugar, Cholesterol, Urinalysis, etc. are detrimental to knowing where you stand. You could already have very high blood sugar levels without even knowing. Equipping yourself with the knowledge of your laboratory test results can help you decide on the next step (with your doctor, of course).<br />

You can also add a boiled egg into the mix if you like. I just skipped that part since I went for a microwave-friendly meal, as with everything else on this list.<br />

You can also throw in some sesame seeds to make it even more appetizing. Paired with some lettuce and kimchi, this can help curb that craving for some Korean BBQ. And to make the meal more filling, have some mashed potatoes on the side.<br />

If you think mashed potatoes are tedious to make, think again! If you use dehydrated US potato flakes, you're bound to cut the prep time by more than half. For carbs, have it with a side of leafy greens, broccoli -- steamed or stir-fried, and US potato wedges. This is a nutritious meal that is filling and tastes good!<br />

This was my dinner last night, and boy was it delish! Chicken breast fillet has got to be one of my favorite proteins to use as it's so versatile. For this dish, I only seasoned it with salt, black pepper and chopped fresh basil before pan-frying it.<br />

On the side is a Mediterranean-inspired salad with greens, cucumbers, red onions, bell pepper and olive oil-balsamic vinegar dressing. As I didn't have feta cheese on hand, I substituted with mozzarella. Pairing everything with a few slices of frozen US potato crisps added another dimension and crunch to the whole meal. Yum!<br />

Unlike the first four on the list, this might look daunting to someone not entirely used to eating healthy. But trust me, this tastes good!<br />

Quinoa is a gluten-free whole-grain food which is more slowly digested than refined-grain counterparts. I've been having it from time to time since 2015, and it does feel more satisfying for longer and adds a nice crunchy texture to meals. Mixing cooked quinoa with cucumber, red onions, US potato crisps and lettuce makes for a nice and filling salad. This will also pair well with different oil-based dressings of your choice.<br />
<br />
But if you're not used to quinoa, feel free to up the quantity of potato crisps to get the amount of carbs your body needs. I do this for my lil sis when I make her a less-daunting version of this salad. The familiarity of potatoes can help those who aren't used to eating salads ease their way into it. This applies even to other salads as well, and not just with this quinoa salad.<br />

As for protein, I like to top my quinoa salad with tofu and garlic shrimps.<br />

<u><b>US Frozen & Dehydrated Potatoes</b></u><br />

The carb for these meal prep ideas can easily be substituted with the carb of your choice. As for me, while I like consuming rice as my main carb, for meal prepping -- meaning you prepare your meals in advance, refrigerate it and consume at a later time, I find that rice isn't really that suitable. Potatoes on the other hand taste great with almost everything, either warm or cold, freshly cooked or even re-heated -- making it a preferred good carb for meal prepping. I've also been partial on using frozen and dehydrated US potatoes because of the convenience. No more peeling and boiling, which saves me a lot of time.<br />

Potatoes also naturally contain Resistant Starch (RS) which is a type of carbohydrate that’s “resistant” to digestion by human digestive enzymes. Limited existing evidence also suggests that RS delivers similar health benefits to dietary fiber and has been shown in animal studies and limited human research to enhance satiety, favorably impact blood lipid and blood glucose levels, and improve the health of the gastrointestinal tract and digestive system. No wonder including US potatoes in my meal plan makes me feel fuller than solely relying on greens for my carbs!<br />

The first time I learned about dehydrated US potato, I was actually surprised that such a thing exists. Yeah, I may have been very ignorant with food technology at that time. But I'm glad I'm now an enlightened potato lover!<br />

Although the flakes may be far from the shape of the potato we know, dehydrated US potatoes are real potatoes with the water removed. It's versatile and can be used from soups and salads to main dishes and desserts. In the Philippines, it's mostly used for baking (that's why it's mainly available in baking supply stores), and yup, you've guessed it, for making mashed potatoes.<br />

<li>Adjust the measurements to get the mashed potato consistency you like. If it's too dense, add more water. If it's too runny, add more US potato flakes.</li>
<li>As with everything related to cooking, adjust the seasoning according to your preference.</li>
<li>Scoop the mashed potato in a bowl or on a plate as a side dish. Enjoy!</li>

Seriously, this is such an easy side dish to make, especially with the US potato flakes! You can play around with the ingredients too, to come up with the mashed potato taste that suits you. I've seen some people using sour cream instead of milk. I've yet to try that out, but you can get creative with your mashed potato without the hassle of boiling and actual mashing.<br />

<b>Ingredients:</b><br />
<ul><li>4 cups mashed potato, cooled</li>
<li>3/4 cup cooked ham, chopped (I used spiced ham)</li>
<li>1/2 to 1 tsp. each of salt, black pepper, garlic powder</li>
<li>2 eggs</li>
<li>Cheese of your choice, cubed (I used cheddar)</li>
<li>1 cup flour</li>
<li>1 cup breadcrumbs (I used Japanese panko breadcrumbs)</li>
<li>Oil for frying</li>
<li>Chopped green onions for garnish</li>
</ul><br />
<b>Procedure:</b><br />
<ol><li>In a bowl, mix mashed potato, chopped cooked ham, salt, black pepper and garlic powder. Adjust the seasoning according to your taste.</li>
<li>When you're good with the seasoning, add 1 egg and mix well.</li>
<li>Pick up a tablespoon size potato mixture and flatten it to form a small pancake. Add in the cube of cheese in the middle and wrap the potato mixture to make it to a ball (or any shape of your preference). Repeat until you finish the potato mixture.</li>
<li>Prepare 3 bowls -- one for the flour, one for the egg wash (beat the remaining egg), one for the breadcrumbs.</li>
<li>Coat the potato balls in flour, then dip in egg wash, and coat with the breadcrumbs. Repeat this step until you've coated all the potato balls.</li>
<li>Heat oil in a medium pan over medium-high heat. You can place the coated potato balls in the fridge as you wait for the oil to heat up.</li>
<li>When the oil is ready, fry the potato balls in batches until golden brown.</li>
<li>Transfer the fried potato balls on a paper towel to drain excess oil.</li>
<li>Serve on a plate and garnish with chopped green onions. You can also serve with sour cream or ketchup. Enjoy!</li>
