Lutong Bahay: Pinoy-Style Creamy Carbonara

Lutong Bahay is a short tag on the title which I use to feature home-cooked food, either in our own home or at a friend's house.

My parents and friends know me as the girl who eats a lot but can't really cook. However, there are days that I get motivated to play around in the kitchen, and today was one of them. For merienda, I volunteered to cook Carbonara. And although real Italian Carbonara makes use of raw eggs, cheese and pancetta, I decided to make the Pinoy-style creamy version.

Creamy Carbonara

This tasty pasta dish is fairly easy to cook. I bet most of you already have an idea or even your own recipe, but let me share with you how I cooked mine.

Ingredients:
  • 1 head minced garlic
  • a dash or two of pepper
  • 2 cans Cream of Mushroom Soup
  • 250mL All-Purpose Cream
  • 300g shredded bacon
  • Spaghetti (or your choice of pasta)
  • Parmesan cheese
  • Olive Oil
Procedure:
  1. Cook the pasta based on instructions and set aside.
  2. Fry 1/4 of the shredded bacon to a crisp and set aside.
  3. Sauté garlic in olive oil and add the remaining 3/4 of the shredded bacon.
  4. When the bacon is cooked (make sure it's not too crispy), add the cream of mushroom soup and 1 1/2 cup of water.
  5. Add all-purpose cream and stir the mixture gently.
  6. Add 1/2 cup of Parmesan cheese (optional, but I love to do this).
  7. Season the sauce with pepper depending on your liking.
  8. Serve the pasta topped with the creamy sauce, crispy shreds of bacon and more Parmesan cheese.

Creamy Carbonara

My version of Carbonara is creamy and very tasty. I love how the bacon in the sauce is quite chewy, while the bacon topping is so crispy. This might not be the authentic version, and I might not be a great cook, but this simple yet delicious pasta dish got my family's stamp of approval. How about you, anything you've cooked recently?

  1. Yummy! I'm a sucker for pasta! My sister usually cook carbonara whenever there's an occasion and wife would could the usual spaghetti. I like it very much with lots of cheese on it.

  10. Hopefully it's as easy to prepare as you've written. I tried making carbonara using ready made sauces in supermarkets but I didn't like the outcome... It tasted so... instant-ish.

  22. Looks really delicious. I know there are other ways to cook carbonara. But I really love the creaminess of carbonara.
    What I cooked last week is the pansit with a twist. Instead of just plain pancit bihon, I added ground pork chicharon on the noodles (pancit malabon style). Next week I will be incharged most of the cooking in my son's birthday.

  24. Looks delish, Sumi! if you want some sweetness in your Carbonara, you can substitute all-purpose cream & evaporated milk to cream of mushroom soup. :)

  41. I'm the Mom-who-can't-cook so I just use the ready-to-use Carbonara Sauce. Just heat it up a little, add pasta, and top with bacon bits - A lazy mom's pasta. LOL!
    Your recipe looks easy to follow so I'll give it a stab this weekend.

  46. looks good! makes me wanna cook again.... you should try Aligue (crab fat) pasta.... it's really good.... i tried making one.... well, can't really give a review on my own cooking without being biased. But I'm telling you, you can't go wrong with Aligue (or am i just speaking for myself? ehehe anyway...

  49. It's a Start for you :) Your a foodie I'm sure in no time you'll be cooking like a chef. I loved pasta when I was still in grade school before I went to High school I experimented with all kinds of spices and ingredients our kitchen looks like a chemistry lab blown out of proportion. Well after all those experimenting I now know how to cook almost any dish with ease. I was a frustrated chef back then. XD

  61. while others enjoy spag, i enjoy carbonara better. I also cook carbonara the way you did, it's the easiest way, I guess...the parmesan makes the carbonara different from the other pasta dishes, and yes you're right, the more parmesan the better...
