Lutong Bahay: Creamy Chicken Adobo

Chicken adobo is one of the most loved Filipino dishes of all time; a staple in every Filipino's dinner table. It's been one of my favorite home-cooked dishes growing up, and is definitely one that many people can consider a taste of home.

Of course, as a very famous Filipino dish churned out by many Filipino kitchens, we can be sure that each household has their own version of adobo. Like ours, for instance, is more on the sweet side. But I've also been to relatives' and friends' houses where I was served with a more pungent adobo, and even a really spicy adobo.

Creamy Chicken Adobo

Recently, I've discovered another way of enjoying chicken adobo. It might be a little surprising for those who haven't been too adventurous with their adobo yet. But I can assure you, this is good stuff that might even become a staple in your own home!

Creamy Chicken Adobo Recipe with Nestle Cream

Today, let me take you on a journey to another interesting but just as delicious version of adobo, Creamy Chicken Adobo.

Ingredients

Ingredients:
  • 1 whole chicken, cut into pieces
  • 1/3 cup vinegar
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 8g sachet Maggi Magic Sarap
  • 1/4 cup crushed garlic
  • 1/2 cup oil
  • 1 pack Nestle All Purpose Cream
  • a few bay leaves
  • peppercorns
  • chopped onions (optional)

Procedure:
  1. In a pot, boil chicken in vinegar, soy sauce, water, Maggi Magic Sarap, garlic, bay leaves and optional ingredients. Cook uncovered.
  2. Upon boiling, lower the heat and simmer while covered until chicken is tender. Simmer for 10 minutes, then strain sauce and reserve.
  3. In a large pan, heat cooking oil. Pan-fry the chicken until golden brown. Make sure to remove excess oil after.
  4. Pour in the reserved sauce and simmer with the browned chicken.
  5. Pour in Nestle All Purpose Cream little by little while whisking.
  6. Remove from the heat. Serve hot. Enjoy!

Chicken adobo is best enjoyed when cooked to match your preferred balance of flavors. So do not be afraid to tweak and experiment. I for one found out that I tend to use more Nestle All Purpose Cream to make my Creamy Chicken Adobo even creamier! I find that a creamier adobo sauce tastes really good paired with hot steamed rice. Kind of reminds me of gravy, but even better!
